George Eisman, R.D., will kick off the Fest with a talk on the "Health Benefits of a Meatless Diet." Gain a greater understanding of the health benefits of a vegetarian or vegan diet as well as an overview of the other important reasons to move towards meat-free living. George is considered one of the nation's foremost educators on vegetarian nutrition. He has served as a faculty member in Dietetics and Nutrition at several universities and colleges and created the first accredited program in Vegetarian Studies. He has worked in a children's hospital, a nursing home and for public health agencies in four states. George has spoken at numerous events and conferences and is the author of two books, The Most Noble Diet (1994) and A Basic Course in Vegetarian and Vegan Nutrition (2003). Howard Lyman's talk is called "Eating the Earth, A Bite at a Time." Most people know Howard from his appearance on the Oprah Winfrey Show when he discussed Mad Cow Disease, revealing that the meat from some cows was being fed to other cows. Winfrey announced on the show that she would not eat another burger. Both she and Howard were sued by a group of Texas cattlemen for food disparagement. Bo Rinaldi’s presentation is entitled "Ancient Food, Super Food, and the Future of Food."
Bo is a modern day visionary devoted to healing and service through natural means. A vegan chef for 45 years and co-author of the best selling cookbook Vegan World Fusion Cuisine, he enjoys sharing his wealth of knowledge regarding super foods, live foods, herbal traditions, and the future of medicine with everyone. He and his wife Star are active in the areas of sustainability, yoga, meditation, healing, and helping others create a more inspired and illuminated future. Kendra Kimbirauskas will speak on "The Factory Farm Alarm - The Threat of Corporate Animal Agriculture in Oregon."
Kendra grew up farming on her family's farm outside of Stockbridge, Michigan, and received her degrees from Michigan State University. After college, Kendra served as a Legislative Aide in the Michigan Senate, before going to work helping rural communities fight the invasion of corporate farms. Kendra has traveled extensively across the United States, working with rural farming families as they struggle to stay on the farm and retain a quality of life despite a growing crisis — the industrialization of the American farm and the demise of the rural economy. Kendra currently lives on a small farm in Colton, Oregon, and can be reached at kendra.kimbirauskas@yahoo.com.
